  1. Con un pelador, pela a lo largo el pepino y coloca las láminas en agua.
  2. Corta la cebolla a la mitad y de ahí a la mitad, para sacar plumas de cebolla.
  3. Corta el tomate a la mitad y de ahí a cubos medianos.
  4. Corta el filete de mojarra en cubos y agregala a un bowl, con limón para que se cocine, revuelvelo por 5 minutos y resérvalo.
  5. Los cuatro chiles colócalos en un sartén y déjalos que se cocinen por 3 minutos de cada lado con ajo y cebolla, retiralos del fuego, quítale la mayor parte de semillas al los chiles, agregalos a la licuadora junto con 75 ml de aceite de oliva y sal al gusto debe quedar una pasta.
  6. Agrega en un bowl, el tomate, la cebolla, y la mojarra con la pasta de chiles, esta última te la dejo a tu gusto puedes agregar desde una cucharada, revuelve todo agrega limón y sal al gusto.
  7. Con un aro de 10 cm, coloca alrededor el pepino en láminas y al interior la mezcla previa.
  8. Con mucho cuidado desmolda y adorna con cilantro criollo.
  9. Disfrutalo.
