  1. Cortamos en cubos pequeños la papa y la cocemos en agua hirviendo durante 10 minutos. Mientras picamos finamente el diente de ajo y la media cebolla morada, ponemos en una cazuela y dejamos que se sofría con muy poco aceite vegetal.
  2. Ya que está sofrita la cebolla y el ajo, agregamos el 1/4 de chorizo de puerco (pero también puede ser de pollo, ya depende de cuál sea tu preferido) y dejamos que el chorizo se cocine. No le pongan mucho aceite porque el chorizo ya suelta su propia grasa y es mejor que se frían con ella. Estamos al pendiente, y cuando vean que el chorizo ya cambio de color es que ya está listo.
  3. Cuando ya mi chorizo está bien cocido le voy a poner la papa que puse a hervir ya cortada en cubos, y yo le añadí unas hojas de epazote seco para que le diera un mejor sabor (esto es opcional pero se los recomiendo porque queda muy rico) lo mezclo y lo dejo a fuego medio por unos minutos más para que se integren los sabores.
  4. Antes de apagarle, rectifico la sazón y si necesita sal le añado poco a poco para que mi guiso no quede salado. Y listo. Un riquísimo chorizo con papa para comer como más te guste!
